As I understand it, if you're on Windows, there is no way to increase the hardware cursor beyond 32x32.
This isn't a problem until I need to drag n drop inventory items, when they suddenly look tiny.
Here's two ideas of how this might potentially be achieved:
1. An option to just hide the cursor while drag n dropping, and having the inventory item sprite follow the (hidden) cursor while it's being dragged.
2. An option to automatically switch to software rendered cursor when the drag n drop begins, and then back to hardware after it's done.

You can hook into the OnInventorySelect / OnInventoryDeselect events to make changes to the cursor settings, but a third option would be to use Unity UI for your cursor rendering:
