For some reason, a unity UI linked with AC menu isn't passing mouse events to the button. The button is stuck in the Normal transition no matter if the button is clicked or hovered over

How are you interacting with the button? With the mouse, a keyboard-controlled cursor, or direct navigation?
If you rely on color-swapping instead of Animation for your Transitions, do they work? It may be a Unity UI issue rather than an AC one - unless clicking the Button doesn't have the desired effect within AC.
Test also creating a new EventSystem, making it a prefab, removing from the scene and assigning that prefab in your Menu Manager to override the AC default one - what then?
