Further info: we gve submitted a build to Nintendo for Switch release, but now need to create a day 1 patch, but this is built in an updated version of AC - will this therefore affect previous saves in the older Version of AC when updating to the new patch created in v1.66?
That's not something that can be definitively answered. It depends on many things: the version you were updating from, and the changes you made since then.
Updating AC doesn't break save compatibility by default, and save compatibility is more of an issue if you've made changes to e.g. your inventory or variables. The main thing to go over are any "Upgrade notes" in the Changelog between versions you're using.
