Is adventure creator helpful when wanting to make a game like 

- 7th guest 

- 11th hour 

and many of the modern adventure games

basically Point and Click without any characters moving.

I haven't played those games, so I can't comment on those specific mechanics.  However, 2D, no character, point-and-click games are certainly possible.

A more morden take on those games are the 1000 doors series..  found some random gameplay on Yt,

from around 2mins into the game, just watch maybe 1 minutte and you get the idea of the entire game.

You can definitely make these kinds of games with AC, you can disable components that you do not need in AC like the player, etc.

Using playmaker with AC you can make this game easily.
