Update NPC prefab models at a later date

Hey guys,

I have a question which hopefully someone that has more Unity3D experience can help me with.  

At the moment I'm using procedurally generated NPC prefabs (UMA) as 'fillers' for my NPCs until I create or purchase more appropriate models at a later date.

I'm wondering if when then time comes, will I have to recreate these NPC prefabs from scratch?  Or is it possible to replace the character model directly?

My initial thought is to use a child object and assign the components to that, then store that in a prefab separately though I'm not sure if this will create further issues down the road or if it will even work at all.

This is important as I don't feel it's an effective workflow to create 3d models before I create the scene, rather I'd like to complete the scenes then alter the 3d models.
