In the case of other Manager fields, you can change them through script - just right-click a field's label to get an API reference to it that you can copy/paste in your script.
Just be aware that - since Managers are asset files - changes made to them will survive exiting Play mode. Therefore, you'll need to make sure that they are set to "default" values when you begin your game. In the case of the "Movement method" above, this can be done by using another such "Engine: Manage systems" Action in the ActionList on start game asset assigned in the Settings Manager.
