So I read some other discussions regarding this, tried a lot of stuff but the Sprite Renderer component keeps moving the pivot to the center as soon as I place a sprite in its sprite field (image 1). The sprite itself has its pivot set at the bottom (image 2). When I delete the sprite from the sprite field, it reverts back to bottom (image 3). I'm out of ideas what the problem might be.

The position of the sprite in image 2 looks fine - I think what you're seeing is just the placement of Unity's position gizmo.
See the top-left of the Unity window - click the button that says "Centre" and it'll toggle to "Pivot".
