Is there a way to set the size of the icon that is displaced next to the mouse pointer when you click an item in the inventory and try to drop it in the scene ?
If not, what size does the icon need to be in pixels for a 'normal' sized display in the scene ? My icons are currently 256x256 and they are HUGE in game (ok size when item in inventory, but huge when I try to drop the item in the scene).

It depends on your "Cursor rendering" option in the Cursor Manager.
Set to Software - the Inventory cursor size can be set further down.
Set to Hardware - it's based on the size of the graphic itself
Set to Unity UI - it's based on the CursorUI prefab, which has an option to resize the RawImage that displays it based on texture size
