Hi,
I was wondering if there's an easy way to relocated the inventory from the top of the screen to aligned on the right side of the screen (vertical) ?
If not : I'm guessing I could duplicate the inventoryUI prefab & restructure it to display vertically ?
If I keep all the layout elements, but replace the visuals for the arrow buttons (left/right -> up/down), will the inventory still function ?

Yes, you can re-style the Inventory menu as needed.
If the Menu's Source is set to Unity Ui Prefab, you can replace its Horizontal Layout Group with a Vertical Layout Group to have slots be arranged vertically, and align the Panel's RectTransform to the right screen edge.
The visuals can also be replaced - essentially, so long as AC can "find" the various GameObjects (linked via their Constant ID number), then they should still function no matter their styling.
If the Menu's Source is set to Adventure Creator, then restyling occurs in the Menu Manager itself. You can set the Items element to arrange items vertically from there.
