My inventory box stretches to both sides of the menu if triggered manually. This is how the UI looks before I trigger it in game:

Triggered manually as is "Appear type" set to "Manual"? Under what conditions does it appear differently?
The Size property is set to Absolute Pixels, so it should remain the same constant size regardless of the menu's size. Try setting it to Manual - though in general I recommend the use of Unity UI for menu rendering, with the AC option best used for prototyping.
I mean when appear type is manual, yes.
I tried setting it to manual for sizing and the same thing happened. Okay, I can do Unity UI. No biggy.
